Friends, a baked macaroni and cheese casserole is a tradition for our family Thanksgiving dinner. When all the children were still home, we asked them to help with the meal and as the years passed they would ask to prepare a particular dish each year.
Our menu usually included sweet potatoes, collard greens, rice, turkey and giblet gravy, sometimes green bean casserole or seasoned green beans, cranberry sauce, dinner rolls, leek and potato soup, baked macaroni and cheese and desserts.
Our eldest daughter volunteered to make the macaroni and cheese in the beginning with assistance from Tony and input from most of us. I for one am it a fan of Velvetta cheese. I like the real old fashioned version with cheddar cheese,a milk, egg, butter, and flour cream as a base and a bit of salt and pepper to taste. Of course there was extra cheese for the top crust.
Our second eldest daughter usually volunteer to make the sweet potato casserole. It was made with slight variations from year to year. One year it may have had a marshmallow topping, the next year pecans and another year a different topping. Either variation of course was delicious.
Our third daughter would help make the dressing, or the soup and one year she made a caramel dessert. Each year she brought a delicious surprise suggestion to the menu.
Tony and I took turns preparing the turkey but I did it most of the time. He cooked the collards, made the dinner rolls and sweet potato bread. I did the green beans, sometimes rutabagas and the soup. Our sons tended to help with the beverages, table setting and clean up.
